A huge bonus of these mushrooms is that they are very rarely wormy and therefore very easy to sort through. If you managed to collect a considerable crop of chanterelles in the forest or were lucky enough to get a lot of chanterelles in the market, you can not only feast on them today, but also freeze them for the winter. In winter, it will be very pleasant to cook fragrant frozen chanterelle soup or other delicious dishes.
Remember that you need to start working with chanterelles on the same day that you picked the mushrooms. You can store them at a low temperature for a maximum of 16-18 hours. So it's better to freeze the chanterelles quickly.
It is very important to clean the mushrooms well from dirt before freezing. Pay special attention to the back of the mushroom cap. It is there that a large amount of any forest debris accumulates. You can freeze chanterelles in different ways: raw, fried, boiled, and also together with the broth in which the mushrooms were boiled. The method of freezing determines for which dishes we will subsequently use such mushroom freezing.
Recipes with fresh chanterelle ingredient
Step 1
For work, we need a pan, knife, skimmer, colander, freezer bags, fresh chanterelles, water.
Step 2
Raw chanterelles are well cleaned and washed.

Put 300 grams of chanterelles in a pot of water. Water should be at least twice as much as chanterelles. That is, for 1 glass of chanterelles, the correct brother is about 2 glasses of water.
Step 4
Bring water to a boil. Remove foam with slotted spoon. Reduce heat and cook covered for 20 minutes.
Step 5
Drain the water. Rinse mushrooms under running water, dry.
Step 6
Arrange the chanterelles in portions in freezer bags, squeezing the air out of them as much as possible. Send to freezer for storage. Frozen chanterelles in the freezer can easily be stored for up to 1 year.
