Regardless of the fat in the composition, beef kidneys are very useful because they contain a large amount of B vitamins: B1, B2, B6, B12, PP; C; pantothenic and folic acids; choline, potassium, selenium, copper, magnesium, iron, phosphorus, zinc. They have protein and few calories.
Selenium is needed for many enzymes and is involved in many processes in the body. It is important for the functioning of the thyroid gland, involved in the production of its hormones, when they are not enough increases the size of this organ and goiter may occur.
The kidneys have antioxidant properties.
