Dumplings will always help out! And they will feed unexpected guests, and they will save them on working days. Fried with a crust, boiled with sour cream or baked in the oven with cheese will appeal to everyone without exception. We also checked the recipes for dumplings on the grill and boiled in grandmother's soup. It turned out great! We share.

The easiest recipe for dumplings with minced meat

To make homemade dumplings, you will need flour, water, salt, ground pork and onions. And a dumpling!

Ingredients:

3-4 cups of premium flour; 300 ml of water; 350 g minced pork and beef; 1 tsp salt; big bulb.

Pour 3 cups of flour into a deep bowl. Make an indentation in the center. Pour salt into a glass of warm water, stir until dissolved, then pour into the flour hole. First, mix the dough in a circle with a spoon, and then with your hands on a floured table, knead a tight dough. You can grease your hands with vegetable oil. Gather the dough into a ball, wrap in cling film and refrigerate for at least 30 minutes. You can also leave it overnight.

Scroll the pieces of pork and beef in a meat grinder, add salt, black pepper, chopped finely peeled onion. Stir the mince until smooth. You can splash a little water on the meat, the filling will be juicier.

Tear off a small piece of dough from the ball and roll it out on a table sprinkled with flour. Powder the dumpling and place a leaf on it. Fill the holes with stuffing. You should not put a lot of fillings: firstly, it will be difficult to squeeze large dumplings through the cells, and secondly, pot-bellied dumplings will tear.

Roll out the second sheet of dough, lay it on a dumpling, sprinkle with flour and walk with a rolling pin.

Turn the dumpling over and shake it over the table. All! Now they can be frozen or immediately boiled in boiling salted water. After the dumplings float, they are boiled for about four minutes.

It is delicious to serve dumplings with butter and pepper, with sour cream and chopped garlic with herbs.

How to sculpt dumplings if there is no dumplings. Roll the dough into a sausage and cut it into equal pieces. Roll each piece into a cake. Place a spoonful of the filling on the center of the cake. Bend the workpiece in half and pinch the edges tightly. The edges can still be glued together.

The most delicious soup with dumplings

Vegetable broth and dumplings with meat! It makes for a great two-in-one meal.

Ingredients:

350 g dumplings; 4 potatoes; carrot; bulb; a spoonful of vegetable oil; 3 peas of allspice; Bay leaf; a spoonful of salt without a slide; 2 liters of water; bunch of greens.

Clean the vegetables. Cut the potatoes into medium cubes, grate the carrots, chop the onion. Put a pot of water on the fire, add peppercorns and bay leaf. Bring the water to a boil. Drop potatoes into boiling water, reduce heat to low. Sauté the onion and carrots in a skillet with oil over medium heat until soft.

As soon as the potatoes are cooked and become soft, increase the fire again, throw the dumplings into the boiling soup. When the dumplings float, add the fried onions and carrots and cook for another 5-6 minutes. Add greens to the finished soup, leave to brew for a few minutes and serve.

Dumplings on the grill

Crispy crust and juicy meat! Dumplings should be laid out on a grill and baked over hot coals. To enhance the taste, we recommend marinating them in advance in a spicy sauce.

You will need:

500 g dumplings; 1.5 st. l. vegetable oil; 3 art. l. favorite sauce (based on tomatoes or mayonnaise) or 1.5 tablespoons of ketchup and mayonnaise and 1 tsp. mustard; salt, black pepper to taste and desire.

Place the frozen dumplings in a large bowl (preferably with a lid). Add sauce and oil, salt, pepper, mix. Leave while you prepare the grill with coals.

Then put the dumplings on the grill, close and fry until golden brown. In the process of cooking, it is enough to turn the grate with dumplings once. Ready!

Dumplings in a pan with cheese (no-hassle dinner in 15 minutes!)

You will need:

400 g dumplings; 200 ml of water; a couple of pinches of salt and black pepper; 3 art. l. vegetable oil; 80 g of hard cheese; a bunch of greens (green onions, dill).

Pour oil into a hot frying pan, put dumplings, fill with water and cover with a lid. Cook over medium-high heat, stirring occasionally, 10 minutes. Cheese grate on a coarse grater. Sprinkle the dumplings with cheese and cook for another 5 minutes, covered. Remove from heat, sprinkle with chopped herbs and serve!

Lean dumplings with vegetables

For fasting and vegetarians, as well as for a change for meat-eaters, we offer dumplings without meat. The filling can be prepared from any vegetables fried with onions and garlic: bell peppers, zucchini, tomatoes, mashed potatoes. Today we offer to cook dumplings with zucchini.

Ingredients:

400 g wheat flour; 2 tbsp. l. bran; 250 ml of water; 1 tsp salt; 300 g zucchini; clove of garlic; 1 tsp vegetable oil; allspice to taste; a couple of pinches of ground nutmeg.

Pour water, salt into a large bowl, stir. Then sift almost all the flour, leaving a little for dusting. Add bran (although you can without them). Knead a soft, slightly sticky dough. If the dough is too sticky, add more flour. Gather the dough together with oiled hands and refrigerate in a bowl wrapped in cling film for 2 hours. This is necessary so that the dough becomes elastic and does not tear when sculpting.

Peel the zucchini, cut out large bones, cut into cubes of 5 mm. Chop the peeled garlic. Heat the pan over medium heat, pour in the oil and simmer the vegetables with salt, pepper and nutmeg for 5 minutes, covered.

On a floured table, divide the dough into 4 parts, roll up a sausage from each and cut into equal pieces. Roll the pieces into cakes, on which spread a teaspoon of the filling. Bend the cakes with the filling in half and pinch the edges, then glue the edges. If you have a dumpling, then just roll the pancakes to its size. Put the filling in the holes, then cover with a second pancake and walk with a rolling pin.

And now dumplings can be frozen in a freezer on a pallet (frozen ones must be transferred to a special bag or box) or boiled in salted boiling water for 4-5 minutes after they float.

Serve with sour cream, herbs, mashed garlic. Enjoy!
