Calcium salt of tartaric acid or calcium tartrate is a dietary supplement that belongs to the group of antioxidants. These substances are added in order to store the products for a longer time and to protect them from rancidity and oxidation. They can be of natural origin or chemically synthesized.

Tartrates are salts and esters of tartaric acid, are actively used in the food industry. The additive is a transparent crystal with a predominantly white color. E 354 is soluble in water, formed by the reaction of tartaric acid or calcium hydroxides and carbonates.

Calcium tartrate is on the list of EU-approved food supplements, its use is allowed in all countries.

Use

Used as: acidity regulator (usually added to beverages, caramel, chewing gum, etc.), salt substitute (in dietary products), emulsifying salt (provides good fluidity during melting), color stabilizer, hardener. It is found in many fruits and vegetables in the form of tartaric acid. Can be added to jams, jams, jellies to regulate acidity. It is sometimes used in the production of processed cheeses, also in pharmacology.

Impact on humans

The manufacturers do not deny that overdose with the supplement can harm human health.
