Required products :

  • 700 grams of skinless chicken breast
  • 1 tablespoon olive oil
  • 1 teaspoon green onions, finely chopped
  • 2 jalapeno peppers, cleaned of seeds and finely chopped
  • 2 cloves garlic, pressed
  • 4 teaspoons chicken broth
  • 2 tomatoes, finely chopped
  • 1/2 teaspoon cumin powder
  • salt and freshly ground black pepper
  • 1/3 cup fresh parsley, finely chopped
  • 3 tablespoons freshly squeezed lime juice
  • 3 medium-sized diced avocados

For garnish :

  • slices of lime
  • sour cream
  • tortilla chips

Method of preparation :

 

  • Heat olive oil in a large saucepan over medium heat.
  • Add the green onions and peppers and saute for about 2 minutes until soft.
  • Add the garlic and cook for another 30 seconds.
  • Add the chicken broth, tomatoes and cumin. Stir and season with salt and pepper to taste.
  • Transfer the chicken breasts to the pan and after the soup boils, reduce the heat.
  • Cover with a lid and simmer for about 10-15 minutes until the chicken is cooked through.
  • Remove the chicken fillet from the soup and let it rest on a cutting board for 5 minutes.
  • Cut into pieces and return to the pan.
  • Add parsley and lemon juice, stir and remove from the heat.
  • Add the avocado just before serving the chicken soup.
  • Garnish with slices of lime, sour cream or tortilla chips, to taste.
