How To Cook Eggplant In Tomato Sauce With Garlic In A Pan - Recipe

Required products :

  • 2 medium-sized aubergines, peeled and diced
  • 3 tomatoes, halved and grated
  • 2 cloves garlic, pressed
  • 3/4 teaspoon cumin
  • 1/2 teaspoon sweet red pepper
  • 4 tablespoons tomato sauce
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon fine sea salt
  • 1/4 teaspoon freshly ground black pepper
  • peel of 1/2 lemon, finely grated
  • 2 tablespoons fresh parsley, finely chopped

Method of preparation :

  • Pour water on the bottom of a large saucepan and heat it over medium heat. The depth should be about 3 centimeters.
  • Put a basket of steamed vegetables in it and add the eggplant cubes.
  • Cover with a lid and cook for about 12 minutes until soft. Drain.
  • Heat the grated tomatoes, garlic, cumin and paprika in a large skillet over medium heat.
  • Stir and simmer for 5 minutes.
  • Add the tomato sauce and stewed aubergines, stir and cook for another 5 minutes.
  • Remove the pan from the heat and sprinkle with vinegar, season with salt and pepper.
  • Add the lemon zest and 1 tablespoon of parsley and mix well.
  • Serve the aubergines warm, sprinkled with fresh parsley.
