Required products :

For swamps :

  • 225 grams of unsalted butter, softened
  • 225 grams of powdered sugar
  • 225 grams of self-swelling flour
  • 1 teaspoon baking powder
  • 4 large eggs, lightly beaten
  • 4 teaspoons instant coffee dissolved in 1 tablespoon hot water

For the glaze :

  • 175 grams of unsalted butter, softened
  • 350 grams of powdered sugar
  • 4 teaspoons instant coffee dissolved in 1 tablespoon hot water

Method of preparation :

  • Preheat the oven to 180 degrees and grease with oil two round shapes with a diameter of about 20 centimeters.
  • In a large bowl, mix the butter, sugar, flour, baking powder and eggs. Mix well with a wooden spoon.
  • Add the dissolved coffee and stir again.
  • Distribute the mixture in both forms and lightly smooth on top with a spoon.
  • Bake the tops for about 25-30 minutes until golden brown or until the toothpick comes out clean from the cake.
  • Turn them over on a wire rack to cool completely.
  • Meanwhile, make the glaze by beating the butter and sugar with a mixer.
  • Add the coffee, stir and divide the cream into four equal parts.
  • Cut the marshmallows in half so that you get four thinner marshmallows.
  • Put the first loaf on a tray and spread 1/4 of the cream on top. Repeat with the remaining loaves and cream.
  • Cool the cake for at least 30-40 minutes, cut and serve with a cup of aromatic coffee.
