Required products :

  • 450 grams of pasta of your choice
  • 300 grams of frozen corn
  • 450 grams of canned beans
  • 2 medium tomatoes
  • fresh coriander to taste
  • 240 grams of cheddar cheese
  • 3 - 4 tablespoons lime juice
  • 1 large avocado
  • 2 teaspoons chili powder
  • 1 tablespoon cumin
  • 1/4 teaspoon freshly ground black pepper
  • 2 cloves garlic
  • 1/4 tea cup olive oil

 

Method of preparation :

Drain the liquid from the canned beans and wash the beans under running cold water. Cut the tomatoes into cubes, the coriander into small pieces.

Boil the pasta in salted water, drain and mix with the corn. Add beans, tomatoes, coriander and grated cheese. Mix everything.

Peel an avocado, cut it into cubes, mash the garlic. Pour the pieces of fruit into a bowl, put lime juice, stir. Then remove the avocado from the juice, add it to the salad. Put the spices and garlic in the juice, finally pour the olive oil and beat slowly.

Season the salad with the resulting sauce, stir and serve immediately. If you need to store it, put it in the refrigerator, but not for more than a day. For greater durability, do not use avocados.
