Required products :
- 500 grams of pork bon fillet
- 1 cup chopped mushrooms
- 1 large onion, finely chopped
- 2 tablespoons olive oil
- 1/2 teaspoon dried oregano
- 1/2 teaspoon dried rosemary
- salt and pepper to taste
Method of preparation :
- Preheat oven to 200 degrees.
- Heat 1 tablespoon olive oil in a pan over medium heat and saute onions for 1-2 minutes.
- Add the chopped mushrooms and cook for another 3-5 minutes until soft.
- Season with salt and pepper, add the dried herbs and stir. Remove from the heat.
- Cut the pork tenderloin lengthwise without cutting it completely and thin with a meat hammer.
- Spread the mushroom filling in the middle and roll longitudinally, overlapping a small part of the two opposite ends. Secure the edge with toothpicks or clean cotton floss.
- Season the roll with salt and freshly ground black pepper.
- Heat the remaining olive oil in a large skillet over medium heat and fry the pork tenderloin on all sides for about 2-3 minutes.
- Transfer to a pan and bake for 30 minutes or until meat is desired.
- Remove from the oven, wrap in aluminum foil and let it rest for 15 minutes.
- Cut the stuffed bon fillet and serve with a garnish of your choice.
