From 1 kilogram of chanterelles, you will get 100-140 grams of dried mushrooms. This is very beneficial, since you can dry a lot of mushrooms and they will take up little space.

Before cooking, dried mushrooms are soaked in water at room temperature and they again gain moisture. Choose strong, fresh chanterelles without wormholes for drying for the winter. Chanterelles are dried in the open air, in the oven, in the microwave, over a gas stove and in a dryer for vegetables and fruits. The last method is the best, since the mushrooms dry very quickly in the dryer, and this is very important. There you can set the desired temperature and there is a constant circulation of air. To speed up drying, large chanterelles can be cut into several pieces.

Chanterelles are considered to be properly dried if they bend a little when compressed, slightly springy and do not break. Watch the degree of drying of the mushrooms, as under-dried mushrooms can become moldy, and then over-dried ones do not absorb moisture during cooking and do not boil well. Under-dried mushrooms should be dried, and over-dried ones should be ground in a coffee grinder and added as a powder to various dishes or used for medicine.

How to dry chanterelles step by step instructions with photos

Step 1

 

For work, we need chanterelles, a kitchen sponge, a knife, an electric vegetable dryer.

Step 2

 

Using a knife, clean the chanterelles from dirt, cut off the tip of the leg.

Step 3

 

Wipe off the dirt from the hats with a clean kitchen sponge. Drying mushrooms should preferably be cleaned of debris and dirt without water.

Step 4

 

Lay the chanterelles on the drying rack for vegetables. Cut large mushrooms.

Step 5

 

Tumble dry until done. This will take approximately 3-4 hours. Properly dried chanterelles should not crumble. They should be dry, but slightly bent. Store dried chanterelles in clean, dry, tight-fitting jars in a dark place.
