Step 2

 

Wash and dry the ginger.

Step 3

 

Remove skin from ginger. Remove the top layer as thin as possible.

Step 4

 

Cut the peeled ginger into circles 0.4 cm thick.

Step 5

 

Arrange the ginger mugs in a single layer on the racks of the electric dryer.

Step 6

 

Dry until done. This takes approximately 5 hours.

Dry in the oven at a temperature of 60-70°C. The oven door must be left ajar. Stir the ginger pieces occasionally to dry evenly. Drying ginger in the oven will take approximately 6 hours.
