Ammonium acetate belongs to the group of preservatives, used to preserve the quality of products, stopping the growth of bacteria and fungi. It can be used as a regulator in the maturation of wine.

Ammonium acetate is obtained by the reaction of ammonium carbonate with glacial acetic acid. In appearance it is a colorless crystal with a weak alkaline taste. Synonym - ammonium acetic acid. Its melting point is about 114 degrees. Solubility: in water - dissolves quickly, in ethers - good, and in acetone - not good solubility.

Use

E 264 has the ability to soften the overly acidic taste of acetic acid in products, is used as a fixative in wool dyeing and as a diuretic.

Impact on humans

Ammonium acetate is completely absorbed by the body, but the acid released during the reaction has a mild non-specific irritant effect. There are no daily allowable quantities. The additive E 264 is often used in the chemical industry, so the main requirement when working with the substance is strict compliance with the rules of occupational safety and technical safety.
