Required products :

  • 1/4 red pepper, chopped in bulk
  • 2.5 cm piece of fresh ginger, peeled and cut into strips
  • 1 piece of chicken breast
  • olive oil
  • sea ​​salt
  • freshly ground black pepper
  • 3 large potatoes
  • left
  • 1 teaspoon turmeric, overflowing
  • 1 lemon / finely grated rind, 3 cut slices and the rest squeezed /
  • 1/2 teaspoon cumin
  • 5 sprigs of fresh parsley, finely chopped

Method of preparation :

  • Preheat oven to 200 degrees.
  • Peel the potatoes, cut them into cubes about 2.5 cm in size and blanch them in boiling salted water for a few minutes.
  • Transfer them to a colander and drain.
  • In a bowl, mix the finely grated lemon peel, turmeric, cumin, chopped fresh parsley, red pepper and ginger.
  • Cut 3 slices of lemon and set aside. Squeeze out the remaining lemon.
  • Add the freshly squeezed lemon juice to the spice bowl. Stir.
  • Add the drained potatoes and chicken breasts, sprinkle with a little olive oil, salt and freshly ground black pepper and mix gently to taste evenly.
  • Arrange the potatoes on the bottom of a pan and arrange the chicken fillet and lemon slices on them.
  • Bake for 25-30 minutes, garnish with fresh parsley leaves and serve.
